Among those listed as famous regional dishes are potato starch noodle and scalded octopus slices dressed with marinade at Sinhung Restaurant and pickled hairy crab and trepang at Tonghungsan District Restaurant in Hamhung City of South Hamgyong Province and seasoned Miricacalia firma (botanical name) at Hoeryong Restaurant in North Hamgyong Province.

Those listed as famous restaurant dishes include trepang soup at Unha Restaurant run by the Unha Taesong Foodstuff Factory, ostrich steak and soup of chopped ostrich and spices at Yaksan Restaurant under Changgwang General Restaurant, chicken wheat vermicelli at Hyangmanru Restaurant, seasoned and steamed mandarin at Yokjonsegori Restaurant in Phyongsong City of South Phyongan Province and cold noodle at Pongnam Noodle House under the Phyongchon District Restaurants Management Office in Pyongyang.

According to Ko Chang Hyok, section chief of the C.C., Korean Association of Cooks, public catering establishments across the country have competed with each other to develop famous and quality dishes.
